A DYNAMIC SEPARATION TECHNIQUE FOR QUALITY MUSTS
Allows to quickly separate the mash from the must after pressing.
This technique is advantageously used compared to traditional racking techniques, on white and rosé musts and sometimes even on red termo-vinified musts.
The AFRODITE mobile unit has been designed and produced to increase the quality of the musts and can be used in all cellars.
After several years of research, this really simple, compact and mobile machine is able to provide high performance.
Indeed, with several models in this range, it is possible to satisfy the working requirements of the smallest to the largest cellars.

The settling of musts is carried out between 1 to 2 hours only, thus optimizing the work.
The AFRODITE unit works at a moderate temperature. The musts can then be cooled without risking stopping the fermentation. This saves considerable electrical consumption and avoids all the problems associated with heating the musts and makes the yeasts work well at the start of fermentation.
The musts obtained are clear and do not require further filtration.
Given the reduced volume of the muds, equal to 2-4% of the initial volume, the filtration times and costs of the muds are reduced.
These musts settled by the AFRODITE unit can be easily worked by

reverse osmosis systems.
The increase in quality is due to the reduced contact time between the musts and the muds.
Thus, compared to traditional settling systems, musts are obtained with a higher content of aroma precursors.
