The cooperative is transforming an old quarry into an underground cellar.



In Cravant, La Chablisienne refurbished a 15,000 m² underground quarry to store nearly 6 million bottles. As part of this project, Arsilac handled the transfer, unloading and installation of 23 stainless steel tanks with a capacity of 377 HL. This feedback report presents the key stages of the project, the constraints of an underground environment and best practices for ensuring the safe transfer of large-capacity tanks.

A unique initiative in the Chablis vineyards

In Cravant, 20 kilometres from its historic headquarters, La Chablisienne has undertaken a unique project: converting an underground quarry into a 15,000 m² wine storage facility. Since spring 2025, this new space has been home to nearly 6 million bottles, stored in near-ideal natural conditions: a constant temperature of 10.5°C and 95% humidity.

This strategic investment is part of a sustainable approach that combines energy efficiency, respect for the local area and heritage enhancement.

A site steeped in history
 

In an increasingly demanding industrial market, speed of execution is a key factor for success. Having a supplier capable of providing equipment that is immediately available and tailored to the specific needs of manufacturers is a major asset. The partnership between David Delibie and Arsilac meets this requirement by ensuring :

      • Operating since the 12th century, it supplied stone blocks transported via the River Yonne to Paris.
      • Before the Second World War, it housed an aeronautical factory belonging to the French Air Force, then was occupied by German forces.
      • After the war and until the 1970s, the quarry remained state property.

Today, this historic site has been given a new lease of life, becoming an innovative wine-producing space serving an iconic cooperative.

Arsilac's contribution
 

In this transformation project, Arsilac was called upon to carry out a crucial technical stage :

      • the dismantling of 23 stainless steel tanks with a capacity of 377 hectolitres at the Chablis site,
      • their safe transport over a distance of around thirty kilometres,
      • unloading and installation in the new underground space.

These logistical operations required rigorous planning and adaptation to the specific characteristics of the site, ensuring the safety of the equipment and its seamless integration into an atypical environment.
